For Miguel Laffan, the identity of Portuguese cuisine, which is unique in the world, is a result of history, of the discoveries and of the encounters with the cultures that formed there. As a result, Laffan seeks to provide a contemporary reinterpretation of the roots of Portuguese cuisine, balancing the flavours and influences of the voyages, secret and exotic ingredients including spices, tropical fruits, seeds, aromatic herbs and many other flavours.

In the L’AND Vineyards in the Alentejo, Laffan found his place at the L’AND restaurant where since 2011 he has developed his cuisine and line of thought, creating a unique gastronomic language with which he won his first Michelin Star for L’AND.
